Cabbage Soup Diet: Day 2 - Soup, Vegetables & A Baked Potato Reward
Day two of the diet and I was really feeling the drain. The lack of carbs and real calories was taking its toll. The good news was that the body was starting to adjust. It was actually easier to bear with the hunger.

Day Two: Vegetables
Eat until you are stuffed will all fresh, raw or cooked vegetables of your choice. Try to eat leafy green vegetables and stay away from dry beans, peas and corn. Eat all the vegetables you want along with your soup. At dinner, reward yourself with a big baked potato with butter. Do not eat fruit today.
Here’s the menu for Day 2 of the Cabbage Soup Diet:
Lunch:
- 1 bowl of cabbage soup
- Stir fried Mustard Greens (sawi) with Japanese Cucumber
Dinner:
- 1 bowl of cabbage soup
- 1 Baked Potato with Butter!
You could say that the entire day, I was looking forward to the baked potato at night! The first bite was heavenly sweet and buttery. Baked potatoes never tasted so good!
